Can't say specifically without knowing the nature of the experiment. But in general terms, the variable is the actual specific thing you want to test. For example, if your question is ';how does sugar affect the growth of molds';, then the sugar you add, and how much you add, is the variable. The control would be another set of the same kind of mold, grown in exactly the same way as the test set, except for the sugar. That way if there is a difference in growth between the sugar group and the control group, you can say the difference was due to the sugar because nothing else was different.
